Here I am! Miss me?
It’s been a crazy couple months- lots of stuff going on week after week. I’m going to try to chill until Easter- as best I can……
We had a craft bazaar at church this past weekend. They had all kinds of soup for sale- I had the taco soup- it was SO GOOD! I learned a new evil trick- probably nothing new to you. Besides the sour cream and cheese available, they also had Fritos!!! I never thought of putting Fritos on soup- I guess because I try to resist buying such snacks.
I’ve been making a quick chicken noodle soup for the kidlets- It was even reported by my hubby to be “good”- like Campbell’s!!! Ah yes, the ultimate compliment- ha! (He actually likes my homemade chicken noodle soup- this way IS reminiscent of Campbell’s…….)
I use Better Than Bouillon chicken base (I get it at Wal-Mart- much cheaper than there on Amazon!), water, some grated carrot, maybe some actual chicken, noodles, some seasoning salt and Nature’s Selection Vegetable Sea Salt (very cheap, again at Wal-Mart). Voila- almost instant chicken noodle soup.
Tonight I made roasted vegetable soup- similar to Martha’s recipe. But, instead of half a dozen beefsteak tomatoes and carrots, I did my regular roasted veggies we have for dinner (sweet potato, onion, zucchini) tossed with olive oil, garlic powder, cumin, chili powder, s&p. I also roasted a handful of grape tomatoes that had shriveled beyond what looked nice in a salad.
After taking them out of the oven I comboed the veggies with some chicken broth (BtB base) in a large pan, brought to a boil, simmered for about 7 minutes. Then I pureed and added some half-and-half. SO GOOD! Thick and sweet.
